  • The Coffee Cherry – detailing the differences between Arabica and Robusta species and an introduction to Specialty Coffee
  • Coffee Producing Regions – highlighting how terroir and processing methods play an important role in the flavour differences of major coffee producing countries
  • Roast Profiles – understanding how different roast levels affects flavour and aroma.

FUNDAMENTALS OF BARISTA SKILLS

As a practical workshop, this class will cover everything that you need to know on pulling consistently great shots of espresso and mastering proper milk frothing techniques. Our Basic Coffee Knowledge and Fundamentals of Barista Skills make a great pair to complete your learning.

  • Espresso Preparation techniques – a skill-building session to develop great techniques for dosing, distributing and tamping
  • Quality Evaluation Training – adjustments to brewing parameters based on visual cues and sensory evaluation
  • Espresso Beverages – interpreting the coffee menu
  • Milk Frothing – identify ideal milk temperature, apply proper positioning and milk frothing techniques and introduction to free-pouring

Baristas, or those who have completed the Fundamental Barista Skills, can look forward to honing their latte art skills in this course. You can expect a rigorous practical session focusing primarily on free-pouring basic latte art patterns – heart, tulip and rosetta.

This class contains the following content:

  • Milk Focused – apply proper milk frothing techniques and understand free-pouring mechanics
  • Pour Analysis – step-by-step guide to achieve respective latte art design subjected for review after each pour to identify areas of improvement
  • Design Presentation – well-textured, centred and symmetrical

ADVANCED LATTE ART

This course allows the experienced baristas the platform to take their skills one step further and build on latte art foundations. You can expect the same rigour in this practical session as we focus on the more elegant and intricate designs like the swans and other inverted designs.

An alternative to espresso making, this course looks at techniques applicable to both home-brewers and professional baristas alike, jumping that “Third Wave Coffee” bandwagon. This workshop introduces you to filter coffee, specifically pour-over, where we will be using the Kalita Wave and V60 pour-over brewers. You can expect to take home some simple yet effective recipes that is sure to give you delicious results on your next brew.

 The class contains the following content:

  • Introduction to Filter Coffee – detailing the differences between espresso and filter coffee and immersion and pour-over brews
  • Brewing Techniques – Pairing right coffee and grind profiles to a pouring technique when building a brewing recipe
  • Quality Evaluation Training – understanding extraction theory and fine-tuning brewing parameters based on visual cues and sensory evaluation

FUNDAMENTALS OF IMMERSION BREWING

You can expect to take home simple yet effective recipes that is sure to impress.

  • Introduction to Filter Coffee – detailing the differences between espresso and filter coffee and immersion and pour-over brews
  • Brewing Techniques – identifying right coffee and grind profiles when building a brewing recipe

SENSORY: TASTING SPECIALTY COFFEE

This course is takes coffee knowledge and appreciation to the next level for a coffee enthusiast or new barista, developing their sensory awareness and understanding. The workshop will cover the fundamentals of olfaction and gustation (tasting) and how you can apply it to taste, perceive and interpret Specialty Coffee’s distinct characteristics, at different roast levels. You can expect to experience coffee like never before.

 The class contains the following content:

  • Palette Awareness – using chemical solutions mixed with coffee solution to emulate the basic tastes that are commonly found in Specialty Coffees
  • Olfactory Training – using Le Nez Du Café aroma kits and the Coffee Tasters Flavour Wheel to build on sensory coffee vocabulary
  • Coffee Cupping – using gustatory, olfactory, tactile and visual cues to conduct coffee sensory analysis
