FUNDAMENTAL BARISTA SKILLS

  • Prerequisites required: None
  • Duration: 3 to 4 hours
  • Cost Per Person: $190.00

This is the starting course for the majority of learners, regardless of their skill  level. It is by no means a basic coffee course and covers some meaty content and practical skill building sessions (which are perfect for a new barista or any home enthusiast) along with enough solid theory and up-to-date, detailed information to develop experienced baristas.

This class covers the following content:

  • Espresso preparation techniques – a skill building, fat-trimming session on developing great techniques for dosing, distributing and tamping
  • Quality evaluation – using a standard dose, we will correlate the visual appearance of an espresso extraction with its taste result
  • Extraction theory – what compounds are extracting, when and why
  • Brew parameter adjustments – dose and grind. How, when and why to adjust
  • Espresso recipes – we measure dose weights, beverage weights and extraction time to make grind adjustments and achieve optimum taste results.
  • Milk steaming and pouring – a small, 45 minute introduction to these vital concepts.
  • Cleaning and maintenance – how and what to clean on your espresso machine and grinder to achieve consistent results.

 LATTE ART TECHNIQUES

  • Prerequisites required: completion of Fundamental Barista Skills or equivalent
  • Duration: 3 hours
  • Cost Per Person: $200.00

For experienced baristas who can already produce reasonably good milk, or those who have completed Fundamental Barista Skills, we have the following course. In it, we work exclusively on free-pouring latte art including hearts, rosettas and tulips:

This class contains the following content:

  • Purely milk focused – this class consists of three hours of steaming, pouring and comparing
  • Steaming technique – we delve deep into the skills required to produce great milk repeatedly
  • Digital – we have digital recorders on hand to show you how you’re doing in post-pour analysis
  • Multiple patterns – in this session, we take you through free poured, layered love hearts, tulips and rosettas
  • Presentation – this class is all about achieving attractive and consistent coffees, with a focus on contrast over complexity.

FUNDAMENTALS OF MANUAL BREWING

  • Prerequisites required: None
  • Duration: 2 hours
  • Cost Per Person: $150.00

In this class, we cover the basics of brewing filter coffee using a full immersion and a pourover method, as well as some great in-depth instruction on adjusting your brew parameters to achieve excellent results. Perfect for those looking to introduce a great filter program in to a café, or setup at home to produce excellent results.

This class contains the following content:

  • Brew theory – Exploration of the effects of grind size, water temperature and brew recipe on extraction results
  • Pourover methods – using the Hario v60 or Kalita wave brewers
  • Immersion methods – brewing using Clever Coffee Drippers

SKILLS FOR THE HOME BARISTA

  • Prerequisites required: None
  • Duration: 2.5 hours
  • Cost Per Person: $150.00

Maybe you’ve just invested in a new espresso machine for your home, or you’ve got a hankering to jump on top of the line equipment and produce the finest espresso known to man. Either way, if you want to learn the true craft of espresso from the best of the best, this is the class for you! 

In this class, we’ll set you up with the same knowledge and systems utilised by Singapore and Australia’s best cafes, all so you can learn how to produce amazing, next level coffee at home.

In this class you’ll explore:

  • Best practice espresso preparation – dosing, distribution, tamping and technical know-how
  • Milk preparation – milk steaming and pouring technique for great beverages at home
  • Standard Espresso menu – we’ll teach you the range of beverages on an espresso menu and practice making them.

SENSORY SKILLS AND COFFEE KNOWLEDGE

  • Prerequisites required: None
  • Duration: 2.5 hours
  • Cost Per Person: $190.00

In this class, we cover the basics of applying tasting and olfactory skills to a coffee tasting experience. In addition to tasting high quality coffees from a variety of origins, altitudes and processing styles, we will learn about the supply chain and see what’s involved in producing some of the best coffee on the planet (and how it differs from the rest).

This class contains the following content:

  • Palette training – using chemical solutions and brewed coffee examples, we will explore how we experience the four big tastes: bitter, sweet, salt and sour
  • Olfactory training – using the Le Nez Du Café aroma kits and the Coffee Tasters Flavour Wheel, we’ll start building our sensory memory in relation to coffee, as well as calibrate as a group
  • Coffee tasting – we’ll show you how to evaluate coffee in a traditional cupping or filter coffee tasting format
  • Coffee knowledge – let us educate you in the coffee supply chain all the way through the farmer, mill, export/import process, sourcing roasting and, finally, brewing.
