Guerrero Santos Walter, Peru

Producer Don Walter Guerrero and his family live and work on the La Roca farm. The farm is small, with just 1.5 hectares of growing area, and is situated at just over 1600 meters above sea level. During the harvest months of June to September, Don Walter recruits 6 additional employees to help with the workload. Coffee is grown at La Roca with a focus on sustainability. Trees are strategically planted to prevent soil erosion, and shade trees such as Guabas and Eucalyptus are also part of the plantation. These shade trees not only protect the coffee trees and the soil, but also increase the microbial activity of the soil. Organic fertilizers, including compost and island guano, are exclusively used for cultivation.

After cherries are picked, they are washed and left to rest for 14 hours. Then, they are dried in low sunlight with frequent turning for 4 days, followed by an additional 20 days of drying before being stored. Once ready, the coffee is taken to Falcon’s warehouse in Jaen for quality assessment, and a price is agreed upon depending on its perceived cup score.
Prices are determined based on lot quality, and Falcon aims to pay 30% above the local price as a quality bonus, which significantly impacts the farmer’s livelihood and that of their family. Finally, the coffee is transported to Café Selva Norte SAC, where it is checked for defects before being bagged and moved to the coast for shipping.

We have been involved in the coffee industry in northern Peru for several years, purchasing specialty coffee from cooperatives and associations with whom we have built lasting relationships. While the quality of coffee upon arrival has generally been good in previous seasons, we have faced challenges in making improvements to the supply chain and directly impacting the quality. The premiums we had been paying for quality seldom reached the producers, an issue we had little control over in the past.

In Peru, like in some other coffee-producing regions, farmers are sensitive to market changes and often lack basic training and the incentive to produce higher-quality coffee, as premiums often do not materialize. Because of these challenges, we decided to change our approach to purchasing coffee in Peru and began working directly with producers to control and improve existing quality, while also ensuring full financial traceability. These measures allowed us to pay higher prices for the coffees and guarantee that producers received a fair price for the coffee they delivered to us, above the market price. To facilitate this, we established a warehouse in Jaen and started purchasing parchment directly from producers.
