Abebe Cherfo, Ethiopia

From 2008 till 2017, most Ethiopian coffees weren't recognised for their transparency. The long-winded value chain and complex local coffee market policies meant small-scale farmers had little to no chance of trading independently on national or international markets. In 2017, the Ethiopian coffee industry underwent reform and diminished its policies, and instead, an open market and quality-focused approach could flourish. 

Following the recent release of Jabanto, this single-producer lot from Ethiopia strengthens the promising future for more traceable, direct-trade coffees of excellent quality from the region. We came across Abebe Cherfo and his washed coffees through our newest relationship with the Jabanto farmers' group.

Abebe being a new member himself, joining in 2019 by reference of a colleague and fellow farmer, brings us a unique lot traceable down to his 11 farm plots from the Reko village near the base of the Rego mountain in Kochere county. 

Among the farmer group, he is one of the few smallholders who grow and produce organic coffee. By default, most of the group use the same techniques to sort and process their coffee.

For the washed, coffee cherries are hand-picked and taken directly to the coffee processing station for sorting and processing. Only the ripest red cherries are pulped and soaked in water for 48 hours. Afterwards, they're washed clean and undergo a 1-2 hour soak in clean water before drying under the Sun.

An essential factor in the refined characteristics of this coffee is the result of the careful drying process. For uniform drying, the coffee dries under the Sun for 2 hours between 8:00 AM and 10:00 AM before being covered with mesh during the hottest hours of the day. It's uncovered again in the afternoon between 3:00 PM and 5:00 PM. This practice allows the coffee to dry at a slower and controlled rate, enhancing the vibrancy and longevity of inherent flavours. This speaks true in the cup with notes of citrus and stone fruits, with a fresh mouthfeel and sweet finish.
