Capsules started approximately four decades ago, but the machines we associate with them followed about a decade later. Now, they are ubiquitous in homes, offices, hotels, and restaurants worldwide.
Perceptions of capsule coffee include it being a fast commodity-grade beverage with a generic taste and poor environmental impact. However, in recent years, independent manufacturers and high-end roasters entering the market are improving coffee quality in capsules and equipment, approaching the format with the care associated within specialty coffee.
When it comes to preserving freshness and maintaining flavour integrity, ground coffee quickly loses flavour and aroma, resulting in a stale cup. To mitigate this, most commercial coffee options undergo strict packaging and sealing standards. Unfortunately, average to entry-level capsules lack sufficient oxygen barriers, risking stale coffee even with excellent beans. Yet, with proper materials, nitrogen flushing, and hermetic sealing, capsules can contain less than 1% residual oxygen, preserving freshness and cup quality for remarkable periods.
Capsule coffee consumption has surged, especially during the pandemic, becoming the fastest-growing segment in the in-home market. While capsules were once associated with low-quality coffee, we aim to change this perception by emphasising that quality coffee, not just the format, determines a great brew. Capsules are just as viable as other brewing methods when quality coffee is used.
Producing a good capsule poses technical challenges, but with the right coffee adapted to the format's variables, great results are achievable. We can already see specialty capsules challenging the notion that convenience must sacrifice quality. Single-serve systems preserve each beverage portion, allowing prolonged enjoyment from the same box with a replicated experience every time. In that sense, capsules excel in flavour preservation, making them among the best methods currently available for consistent, delicious cups.
Instant coffee achieves high extraction rates around 60%, due to its unique brewing process, while specialty coffee typically extracts around 20%. However, the ideal extraction for flavor is under 30%. capsules use specialised roller grinders for more even extractions, maximising small doses efficiently. Capsule machines also have an advantage by heating only the necessary water, unlike café machines that waste energy by continuously boiling large amounts.
Material quality is crucial in the capsule market, with plastic being replaced by aluminum or plant-based materials. Aluminum is preferred due to its recyclability, superior sealing, and ability to preserve freshness longer. While plant-based materials are biodegradable, they are often single-use and energy-intensive. Aluminum's recyclability makes it a sustainable option, particularly in regions like Singapore. We didn’t mention reusable pods as those still require grinding and manual preparation. It’ll be an unfair comparison and will be hard to match the taste experience of a ready-to-drink capsule manufactured with high-spec industrial equipment. However, these are still great options for users who value the reusability factor.

There really is something for everyone, regardless of where we meet them on their coffee journey. Capsules and espresso machines are poised to grow together, appealing to customers who enjoy both manual brews and capsule coffee throughout the day.
