At Finca El Porvenir, once the cherries are depulped, their skin—cascara—is carefully collected and dried, transforming what was once a by-product into something remarkable. Cascara offers a flavour profile all its own: naturally sweet, with notes of dried fruits, florals, and honey. Its light body and gentle acidity make it a refreshing brew, whether steeped hot or cold, with a warm amber hue and flavours true to the essence of the coffee cherry.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eFinca El Porvenir, overseen by Diego Triana, sits in Colombia’s Cauca region, where volcanic soil and cool mountain air come together at altitudes between 1700 and 1900 metres above sea level. The farm cultivates varietals such as Castillo, Caturra, Pink Bourbon, and Tabi. This cascara is made with the Tabi varietal, a cross of Bourbon, Typica, and Timor Hybrid, initially developed for its resilience against coffee leaf rust, without sacrificing the exceptional cup quality of its parents. The name Tabi means “good” in the Guambiano dialect—a fitting tribute to this tall, long-branched variety, whose slightly larger fruits and seeds allow for denser plantings and higher yields. The drying process can take several days to a couple of weeks, depending on the climate and weather conditions. Some of these are experimental trees used to test productivity and resilience to climate change, while others are more common varieties. This gives farmers access to renovate or replant their plots at a lower cost. From the 70s to 90s, volatile global coffee prices paired with armed civil conflict impacted grower livelihoods, forcing many to diversify income sources or migrate for work. Despite the instability and disruptions to trade, many farmers in the region persisted, upholding deep-rooted tradition and pride in agriculture. During the global rise of the specialty coffee movement in the early 2000s, Garzon and Huila at large gained recognition among international roasters for high-quality washed process coffee.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAs the majority of Colombian producers classify as smallholders, they nearly always rely on a cooperative model to sell their coffee to an international market. Within the last 5 years, one of Garzon's primary cooperatives went out of business and left smallholders in a vulnerable position without access to market—thus the start of the company Helvetia, the trader that we sourced this regional lot from. Helvetia was established in 2021 to support the growers and act as a link between producers and the international market. Helvetia now purchases coffee directly without intermediaries, creating more value as they offer technical advice and improved systems for smallholders.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis regional lot represents a mix of the most common varieties grown in Garzon, contributed by as many as over 1,500 producers, consolidated for uniformity in quality before processing. The favourable terroir and Andean–Amazonian transition climate created the conditions to produce clean, sweet, and expressive coffees, but it wasn’t easy to organise or access markets due to inadequate infrastructure and challenging, remote terrain. Most farms are smallholders with less than 5 hectares of land and are widely dispersed. Today, local cooperatives are able to aggregate production from hundreds to thousands of farmers, providing technical training and quality control, while facilitating direct export relationships.\u003cbr\u003e\u003cbr\u003eLoro Verde comes from smallholders in the high-altitude areas around Jaén, surrounded by pristine natural conditions. However, this potential isn’t always realised when producers don’t have the necessary infrastructure and technical support during key stages, from picking to drying, that maintain quality. The challenges in post-harvest processing stem from farmers receiving little to no training in the understanding and precision required to maximise the quality of their coffee. \u003cbr\u003e\u003cbr\u003eIn 2018, international traders and sourcing partners at Falcon Coffee established an export company in Peru with the mission of being closer to producers. As part of their Peru operation, they set up a quality control lab and warehouse where producers can deliver their dried coffee, which is immediately assessed for score and price.
