Describe the perfect setting to enjoy a coffee.
Espresso before the gym, milk based espresso as breakfast, and filter every other time.
How did you get started in the coffee business?
When I was 16 I got fired from the snowboard store I was working at and when I fronted my parents at their cafe they sent me out the back to wash dishes. Later that week a coffee rep came in to teach us some espresso brewing, after that I was all in.
What's your relationship with coffee?
Coffee is my girlfriend. But don’t tell my wife I said that.
What advice would you give new roasters who are just starting out their careers in coffee?
Develop your sensory ability as well as roast theory and practice, practice, practice.
What’s your favourite part of roasting coffee?
In your opinion, what makes a good coffee?
Something that is well balanced with interesting flavours.
What do you think about competitors in industry?
Competition is only in your mind. We’re all friends!
What opportunities has coffee given you?
Loads of travelling experiences, many friends, and a pretty good lifestyle for someone that got fired from a snowboard store.
What would you like to see happen in the coffee industry over the next ten years?
Less arrogance and more geishas ;)
